From Sam’s Kitchen, we have another recipe!

This is an imitation of Hamburger Helper, but because it isn’t processed it’s better for you.

Of course, she adds a few things as well to boost the health aspect of this recipe.

Ingredients:

1 lb pasta (cavatappi, elbows, or shells)

1 lb ground beef

1/4 cup olive oil

1/2 onion chopped

1 clove garlic minced

1 1/2 cups tomato puree

2 cups grated parmesan

1/4 cup sour cream

2 cups baby spinach, torn

8 ounces sliced mushrooms

Salt & pepper to taste

Directions:

  1. Cook the pasta in boiling water 2 minutes less than the directions on the box. If you’re using Banza pasta, cook 4 minutes less than the box says.
  2. Heat olive oil in a large pan, add onions and mushrooms. Once softened, add the ground beef, breaking it up as it cooks. Once browned, add garlic. Deglaze with tomato puree and add 1/2 teaspoon salt. Simmer for 4 minutes.
  3. Add pasta to pan along with parmesan. Stir in sour cream and spinach and cook until spinach is done and sauce is consistent.

When Sam makes this dish, it keeps very well for leftovers.
