This is a fantastic recipe.

They are suitable for any food preference out there aside from those with a nut allergy.

They are also incredibly easy to make and they don’t even require cooking.

Try making these and see if anyone can tell that they aren’t the typical brownie!

Ingredients:

1.5 cups nuts (pecans, walnuts, almonds, or cashews)*

Dash of salt

8 dates, pitted^

1/3 cup unsweetened cocoa or carob powder

1 teaspoon pure vanilla or almond extract

2-3 teaspoons water

1/4 cup cacao nibs (optional)

*Cashews will give softer texture. You may combine different nuts to equal the 1.5 cups to get the texture you like.

^Soak dried dates for 5 minutes, use fresh dates, or use Medjool dates

Directions:

Place nuts in the bowl of a food processor fitted with a metal blade and add salt.

Process until finely ground.

Add dates and process until the mixture sticks together.

Add cocoa powder and vanilla.

Process briefly.

Pack mixture firmly into 6” square glass container.

Sprinkle cacao nibs on top. (optional)

Refrigerate for at least 30 minutes.

Cut and serve.

These brownies can stay refrigerated for up to 2 weeks. Alternatively, you may freeze them and keep them for 2-3 months.

Put ‘em to the test and see if anyone notices that these are vegan and gluten free!
