I took a class over the weekend and learned the easiest recipe ever.

It’s a dessert recipe and it’s healthy as well!

They are called “Energy Cookies”.

This is because they are made with great ingredients, giving you energy without the crash, (no sugar) and they satisfy the sweet craving to boot.

Ingredients:

1/4 cup raw almonds

1/4 cup raw walnuts or pecans

1/3 cup pitted medjool dates

Dash salt

Optional:

1/4 teaspoon almond extract (add a little extra for an amaretto type cookie)
1/4 cup raisins or dried cherries

14 cup unsweetened shredded dried coconut

Steps:

Put nuts and salt in a food processor using the S-blade and process until coarsely chopped.

Add dates and optional almond extract and process until mixture sticks together. Do not over process.

Optional ingredients: Add and pulse briefly, just to mix.

Transfer the mixture to a bowl.

Scoop about 1 tablespoon of the mixture into your hand and squeeze firmly until it sticks together. Roll into 1 inch ball.

Refrigerate for at least 1 hour before serving.

Note: Cookies can be stored in a sealed container in the refrigerator for 1 month or 3 months in the freezer.

This recipe makes about 12-14 cookies. Make them ahead of time and eat these when you get a craving for something sweet!
