Lots of us go apple picking this time of year.

We buy the bag at the apple orchard, head out to the field, and fill that bag up.

Then we get home and the apples look great on our counter or table! Until they don’t…

Whoops!

Let’s look into some ideas (besides making a pie of course because you already did that!) with what we can do with these apples.

Apple Slaw

2 Medium Green Apples (Julienne Cut)

1 Medium Carrot (Julienne Cut)

1/4 Cup Thinly Slice Red Onion

1/4 Cup Sliced Green Onion

1 Tablespoon Chopped Cilantro

1 Teaspoon Rice Wine Vinegar

1 Teaspoon Peanut Oil

Toss together and let it sit for 10 minutes

Apple Butter

6 Pounds Gala Apples Cored and Quartered

1/3 Cup Apple Cider Vinegar

2 Tablespoons and 2 Teaspoons Honey (yes, you’re reading that right)

1/2 Teaspoon Ground Cinnamon

1/4 Teaspoon Ground Cloves

Bake apples at 350 degrees on parchment paper, until apples are amber color – about 2 hours.

Let apples cool then blend with other ingredients until pureed and smooth.

Store in airtight container for up to 1 month.

Cinnamon Apple Chips

4 Cored McIntosh Apples Sliced 1/8” – 1/4” Thick

2 Teaspoons Cinnamon

Coat apples in cinnamon in a mixing bowl.

Transfer to pan lined with parchment paper.

Bake at 200 degrees for 2-3 hours until apples are dry yet a bit soft still.

Allow to cool before storing in airtight container for up to 4 days.

Apple Cider Chicken

1.5 Pounds Boneless Skinless Chicken Thighs (About 8 Thighs)

1/2 Cup Apple Cider

3 Apples Cored and Sliced to 1/2”

2 Teaspoons Chopped Fresh Rosemary

Olive Oil

2 Teaspoons Dijon Mustard

Salt

Pepper

Salt & pepper the chicken while heating olive oil in a pan to medium high heat.

Add chicken to pan and flip after 4 minutes.

Cook chicken 3-4 more minutes until internal temp reads 160 degrees.

Remove chicken from pan and wipe pan with paper towel.

In a bowl stir together mustard and cider.

Add oil to pan and add apple slices with salt, pepper, and rosemary.

After 5 minutes apple should be golden. Put chicken in pan with cider/mustard mixture.

Reduce liquid in pan by half (about 4-5 minutes).

Apple Energy Bites

2 Cups Old Fashioned Oats

1/4 Cup Ground Flaxseed

3/4 Teaspoon Cinnamon

1/3 Cup Almond Butter

1/4 Cup Plus 1 Tablespoon Honey

1 Teaspoon Vanilla Extract

Pinch of Salt

1 Cup Grated Apple (not tightly packed)

In one bowl, mix oats, flaxseed, and cinnamon.

In another bowl mix almond butter, honey, vanilla, and salt.

Combine contents of both bowls until well mixed.

Add apple and stir to combine.

Scoop contents into bite-sized balls.

Refrigerate for 2 hours.

Store in airtight container in refrigerator for up to 4 days.
